Chefs began to cook them, but they changed the recipe a little and they also started to use soft sirloin as opposed to using skirt steak.

A Short History Of Tex-Mex

A lot of people in the US think that these dishes are an example of what Mexican cuisine stands for, but they are wrong. The label wasn’t created until the 60s, but the origin goes back to when Texas was part of Mexico. Tex Mex was Once a Railroad

The term Tex-Mex did not originate with the invention of the quesadilla. The origin can be traced all the way back to the Texas-Mexican Railway. This was chartered in the year 1875 and it was 52 miles long. It helped to deliver sheep from ranchers in from Texas to Mexico. Eventually, it would be used to describe Mexican and Texan cuisines.  The establishment of Spanish missions in Mexico also helped to popularize the term. Aztecs brought staple foods such as beans, along with European ingredients. This included cilantro, oregano, garlic, rice, and onions. Tex-Mex cuisine started to separate from some of the more traditional dishes because of Tejanos. They lived just north of Rio Grande. These people were blood descendants of the Spanish-speaking settlers, who lived in Tejas. Texas then became an independent state, and then eventually part of the US. Elevating Tex-Mex Takeout: Fajita Pete’s Opens in Denver

Centennial, Colorado — Fajita Pete’s, an emerging national concept specializing in Tex-Mex takeout and delivery, celebrated the landmark August opening of their first Colorado location.

The restaurant opened in Centennial, a suburb in the southeast Denver area with mountain views and a growing demand for restaurant variety.

Keith Graham, Denver food blogger of @gourmand_guide explains that despite a robust restaurant scene, Denver is home to “a lot of the same offerings.”

“This is Tex-Mex like you’ve never seen it,” hints franchising team Hugh and Rebekah Guill. Longtime champions of the Colorado expansion, the Guills are already working on their second Colorado location with plans for a total of five in the next four years.

“The Denver area has a great and established food scene, but Rebekah and I recognized that quality, convenient, and affordable Tex-Mex options were hard to find,” shares Hugh.

Fajita Pete’s began in 2008 as a single restaurant in the Tex-Mex mecca of Houston, Texas with a key differentiator—almost no dine-in.

Texas-born Fajita Pete’s has announced the signing of five Chicago locations, the first of which is set to open by Q2 2023. This latest deal signing brings the total Fajita Pete’s opened plus awarded unit count to just north of 100.

From hot dogs to deep dish pizza, Chicago is a heavy-hitter for casual culinary classics that have risen to cult status. And, if you ask the franchising duo of Teddy Wyder and Veronica Rivero, fresh fajita delivery is sure to be the next Chicago fan favorite.

Longtime Chicago couple turned restaurant entrepreneurs, Wyder and Rivero share the origin of their fajita-filled journey. After a business partner in Texas raved about Fajita Pete’s after every visit, the pair contacted the head of Fajita Pete’s franchising. “We quickly fell in love with the business model, the team, and of course the food,” says Wyder. “Chicago is an incredible food mecca, but it has nothing like Fajita Pete’s.”

The Franchising Duo

Wyder will lead the operation with an MBA from the University of Minnesota and nearly two decades in manufacturing and logistics, and, he reports, a nail-biting second place finish in a burrito-eating contest.

Rivero rounds out the duo’s credentials with years of sales and marketing experience at tech startups. She is a University of Notre Dame grad and co-founder of the Chicago Chapter of The Latinista, a professional organization that helps provide women of color the right tools and resources to advance in their careers.

From Tech to Tex-Mex: Conroe Native Opens Fajita Pete’s – Conroe 

“When I was younger, Conroe was nothing but trees and a few hole-in-the-wall restaurants,” recalls food blogger Conroe Foods. “But now, everyone is coming to Conroe.” Demand for dining options, the blogger notes, is at an all time high.

But, he adds, that doesn’t mean it will be easy for new restaurants. The Conroe food scene is packed with longstanding local favorites and authentic Tex-Mex recipes that have been handed down for generations. 

“There are a lot of busy people in Conroe that don’t have time to sit down and grab a bite so takeout is their main option,” the blogger adds.

“I grew up in the area,” Compofelice shares. “I went to school here, and all of my family lives here. My wife was even born at the hospital in Conroe not a quarter mile from our Fajita Pete’s location. Fajita Pete’s – Conroe has already made it their mission to serve far more than fajitas, working with the Veterans Taskforce on a program to support the area veteran community, installing a “Pay it Forward” board in their store, and donating meals to CASA, an organization that supports children in the foster care system.
